Why would anyone bother pickling onions, you might ask? After all, it’s wonderfully sharp and crunchy as it is. And I agree! But sometimes you want to feel a slight spiciness without the taste of onion being too overpowering. And that’s when pickling comes in handy. This way you retain the wonderful onion flavor without it being too overwhelming and masking the taste of the dish. And pickled onions don’t just go well with kebabs or grilled meat. They’re wonderful in salads or in burgers. In fact, you can add them to any dish you like and they’ll elevate it!

Peel and thinly cut the onion into half moon slices. In a sautee pan, combine the sugar, water, salt and vinegar, place over medium heat and stir until dissolved. Take the mixture off the heat and let it cool.
Pack the onion slices into a pickling jar and pour the vinegar mixture over. Add the spices. I usually use allspice and cloves, but you can come up with your own spice mixture.
