Preheat the oven to 180 degrees. Wash the mushrooms and separate the legs from the hats. We don't need legs, but you can add them to soup or roast them.
Put the mushroom caps on a baking sheet covered with parchment, pour olive oil and bake in the oven for 15-20 minutes. Remove from the oven and allow to cool.
Peel the garlic and chop it finely. Mix feta with garlic and chopped parsley in a bowl.
Add the baked mushroom hats and stir a little. If desired, add a little freshly ground pepper.
