You can make regular fish balls not regular: just mix two kinds of fish and bake these balls over the beet pillow. It will fill them with a nice beet flavour.
How to cook fishballs in the oven
Ingredients
Fishballs: Directions
Preheat the oven to 180 degrees. Cut 500 g of perch fillet and 250 g of salmon fillet in pieces. Also cut raw carrots and onions. Pass through a meat grinder.


Chop the leaves of 2 sprigs of tarragon and add to the stuffing. Do not throw twigs away, we will use them later.


Add 2tbsp. of breadcrumbs to the stuffing and set aside the rest.


Add 1 egg yolk in a bowl with minced meat, add salt and pepper to taste.


Peel a beet and slice it into small slices. Lay the slices on the bottom of the baking form in which you will bake fish balls.


Mix the minced fish well and form large balls. I got 9 fish balls. Put them in a form over slices of beets.


Sprinkle the remaining fish balls with the remaining breadcrumbs on top. Put a sprig of tarragon in the shape, they will give the dish a pleasant fresh flavour. Bake in the oven for 20-25 minutes.
