Vichyssoise (Pureed Leek Soup)

Finely dice the onion and leeks. In a frying pan, melt the butter over medium heat and sautee the leeks and onion until tender. Salt and pepper to taste and add a pinch of the fennel seeds.
Dice the potatoes, transfer them to a medium-sized stockpot and cover with a centimeter of water. Add the leeks and onion and cook over medium heat until the potatoes are tender.
Once the potatoes have cooked through, add the cream. Using an immersion hand blender, puree the soup until smooth. If the soup is too thick, add a little more cream or water. Salt to taste.
