Pancakes with apricot jam: Directions
Pour 300 ml of yogurt into a bowl and add one egg. Stir with a whisk.

Then add one pinch of salt, 1 tbsp. sugar and 10 g of vanilla sugar to the bowl.

Then add ½ tsp. soda and again mix well with a whisk. Cooking soda will add splendor to pancakes.

Add 200 g of flour and mix well again.

There should be no lumps left in the dough. The consistency should be thick. If you use thick yogurt, the dough may also be too thick, then add little with water. Cover the bowl with cling film and leave the kneaded dough for 20-25 minutes.

During this time, cook apricot jam with walnuts. Cut 500 g of apricots in half and put them in a saucepan. Cover the apricots with 250 g of sugar. If you want to get a more sour jam, use less sugar.

Add 50-75 g of coarsely chopped walnuts. Cook for 20 minutes on medium heat.

The dough has already stabilized and you can start frying pancakes. Heat a frying pan with a little sunflower oil. Fry the pancakes for 1 minute on each side until nicely ruddy. Serve pancakes with apricot jam.
