Fermentation is my favourite process in cooking. I’ve read a lot of books about it, and it changed my attitude towards this tiny world. Ginger Ale is also the result of fermentation. It’s alcohol free and very tasty. Fermentation gives it tiny sparkles that gently tickle your tongue. Also it is very easy to cook it at home. Full recipe is in the gallery.
How to prepare Alcohol Free Ginger Ale
Ingredients
Alcohol Free Ginger Ale: Directions
In a large saucepan, boil 2 liters of water. Peel the ginger, grate it and throw it in boiling water. Reduce the heat and simmer for 30 minutes.
Strain the drink through a sieve (do not throw away the ginger). Add sugar and mix well to dissolve the sugar completely.
Squeeze the juice of 2 lemons, add 2 liters of cold water and ginger, which we had previously left on the sieve.
Pour ginger ale into a jar and leave to ferment for 24 hours. Stir often. If after 24 hours the bubbles do not appear, add a few slices of raw ginger, mix it and leave for 1-2 days until the bubbles appear in the drink.
Pour into bottles that can be hermetically sealed. And leave it in a warm place for 1-2 days, depending on the temperature. Then cool the bottles and drink it.
