Chicken putria (ground barley porridge): Directions

Step 1

Preheat oven to 180°C / 350°F degrees. Soak fine-ground barley in homemade kvass for at least 6-8 hours, preferably overnight.

Step 2

Marinate chicken breast for 10 minutes in salt, pepper, ground paprika, lemon juice and oil.

Step 3

Place chicken breast on a baking paper-lined roasting tray, and cook for 25-30 minutes. It has to be well done.

Step 4

Cut the carrot and the zucchini into very thin slices with a peeler.

Step 5

For the homemade mayonnaise, mix egg yolk, mustard, salt and pepper in a bowl, add lemon juice and start whisking. Slowly add the oil at a dribble and mix well until the mayonnaise is smooth and thick.

Step 6

Dress the vegetables with homemade mayonnaise, and put them into individual plates.

Step 7

Put thin slices of the chicken breast and soaked ground barley over the vegetables and serve immediately.
