In case you need any more evidence that broccoli cabbage is brilliant, cook this casserole with broccoli, cauliflower and peanuts. To my mind, it is the best way to cook this pretty vegetable.

Ingredients

Preheat the oven to 180 degrees. Take either 300 g of broccoli and cauliflower. Cut off the hard bottoms. Blanch the cabbage in boiling water for 1-1.5 minutes, but no longer.


Discard on a sieve and rinse with ice water to stop the heating process.


Grate yellow cheese (180-200 g) on a large grater and sprinkle half of the cabbage. In a bowl, combine 300 ml of cream with 3 eggs, add a little salt and black pepper. Mix everything gently with a whisk.


Grease a baking dish with 20 g of butter and evenly distribute the broccoli and cauliflower inflorescences, sprinkle with freshly ground black pepper. Fill the cabbage with the mixture and cover with grated cheese. Add 100 g of peanuts to the casserole and bake in an oven for 20-25 minutes.
