What if I say that you can cook homemade sausages but instead of meat use potatoes? No, I’m not crazy… just a little bit, but you’ll get used to it. Take this recipe and cook!

Step 1

Preheat oven to 180°C / 350°F degrees.

Step 2

Boil unpeeled potatoes until ready. Leave them to cool, then peel.

Step 3

Cut pork fat into small cubes and melt on the skillet until soft. In the lard, fry finely diced onions and garlic.

Step 4

Mash or blend the potatoes, add fried pork fat, onions and garlic, season with salt and pepper to taste, add crushed bay leaves and mix well.

Step 5

Fill sausage casings with mashed potatoes to make 12-15 cm / 5-6-inch-long sausages. Poke them with a toothpick several times to make sure that the casings won’t break during roasting.

Step 6

Place the sausages on an oiled roasting tray, and cook for 15-20 minutes until golden brown.

Step 7

Serve potato sausages hot with sour cream.
