Pork stew

Ingredients
800 g / 1.7 lb. fatty pork (neck)
¼ celery root
6-8 potatoes
3-4 tbsp. vegetable oil
150 g / 5 oz. pork fat
1-2 onions
1 carrot
1 garlic
100 ml / 7 tbsp. dry red wine
1-2 tbsp. tomato paste
3-5 sprigs of parsley for decoration
salt, pepper
Pork stew: Приготування
Крок 1
Preheat oven to 180°C / 350°F degrees.
Крок 2
Fry pieces of meat in a hot oiled skillet until golden brown.
Крок 3
In a frying pan, render the pork fat and fry the finely chopped onions, carrot and celery with the fat. Add crushed cloves of garlic. Cook everything together until soft, then add to the skillet with the meat.

Peel potatoes and chop them into small pieces. Add to the skillet with salt, pepper and ½ liter / 2 cups water. Bake for 40 minutes.

Dissolve the tomato paste in wine and pour it into the skillet. Put it back into the oven and cook for 30–40 more minutes until ready.

Serve the pork stew hot. Optionally, you can garnish the stew with finely chopped green parsley.
