Kvasha (fruit-and kvass dessert): Directions
Preheat oven to 180°C / 350°F degrees.
Soak 5 slices of rye bread in kvass for 10 minutes. Add sundried or smoked pears and apples (similar to what is used in uzvar) to the bread-and-kvass mixture.
Bring the mixture to a boil the mixture and leave it to cool fully. Once cooled, remove boiled pears and apples.
Either pass the soft rye bread mass through a sieve or pulse in a blender until creamy. Add lemon juice, ground black pepper and salt to taste.
Cook rye bread chips. Cut the bread into thin slices and dry in the oven for 3 minutes.
Serve kvasha sprinkled with finely chopped walnuts. Decorate with rye bread chips.
