Kvasha (fruit-and kvass dessert)

Ingredients
300 ml / 1¼ cup kvass
100 g / 3½ oz. sun-dried or smoked pears, prunes, apricots and apples
5 slices of rye bread (additional 150 g / 5 oz. bread for the chips)
50 g / ½ cup walnuts
a pinch of ground red pepper
a pinch of salt
juice of ½ lemon

Крок 1
Preheat oven to 180°C / 350°F degrees.
Крок 2
Soak 5 slices of rye bread in kvass for 10 minutes. Add sundried or smoked pears and apples (similar to what is used in uzvar) to the bread-and-kvass mixture.
Крок 3
Bring the mixture to a boil the mixture and leave it to cool fully. Once cooled, remove boiled pears and apples.
Крок 4
Either pass the soft rye bread mass through a sieve or pulse in a blender until creamy. Add lemon juice, ground black pepper and salt to taste.
Крок 5
Cook rye bread chips. Cut the bread into thin slices and dry in the oven for 3 minutes.
Крок 6
Serve kvasha sprinkled with finely chopped walnuts. Decorate with rye bread chips.
