A few slices of bread, tender cheese, eggs and ham are our typical breakfast ingredients. But if you know how to combine them a little differently than we usually do, then you get a Croque Monsieur – a classic French breakfast dish. According to legend it was created by Parisian workers who accidentally left their ham and cheese sandwiches too close to a hot radiator. Whether or not that is true is up to debate, but we can all agree that it is a wonderful breakfast dish – and very easy to make, too!

Preheat the oven to 180C. Beat the eggs in a dish with a whisk until slightly foamy.

Whisk in the milk, salt and pepper to taste. Mix until well-combined.

Dunk both slices of bread into the custard, turning to coat both sides evenly.

Melt the butter in a hot pan. Once the butter has melted and is bubbly, cook the egg-coated slices of bread in it. About a minute should be enough.

Place a slice of ham and cheese onto one of the bread slices, top with another layer of ham and cheese. Cover with the second slice of bread, so that the toasted side faces up.

Pour the rest of the egg mixture over the sandwich and top with the remaining slice of cheese. Cook the sandwich for half a minute more.

Transfer the pan with the sandwich into the pre-heated oven. Make sure that your frying pan is oven-safe! Bake the sandwich for about 2-3 minutes, until the cheese on top has melted. Remove the sandwich from the oven and sprinkle with freshly-ground pepper. Serve hot.
