Apple vertuta: Directions

Step 1

Sift the flour. Make a well in the flour and add the egg, salt, warm water, oil, and sugar. Knead the dough until soft and elastic.

Step 2

Cover with a linen towel and leave to rest for 40 minutes.

Step 3

In the meantime, prepare the filling. Peel the apples and grate on the coarse side of the grater. Add raisins, lemon juice, cinnamon powder and sugar. Mix well.

Step 4

Roll out the dough in a very thin layer. Cover evenly with the filling and twist into a roll.

Step 5

Put the rolls on the parchment paper-lined baking tray, brush them with egg yolks and bake at 180°C / 350°F for 20 minutes until a shiny golden brown crust forms.

Step 6

Once cooked, brush the rolls with the glazing. Whisk cream cheese together with sugar powder, lemon juice and milk until the ingredients are thoroughly blended.
