Preheat the oven to 180C.

Combine the flour, cubed butter, eggs and a pinch of salt until it turns into a crumbly dough. The texture should be like moist sand. If the dough is too dry, mix in a couple of tablespoons of milk or water (or both). Roll out the dough to a 3-5 cm thickness and line your pastry pan. Make sure it has a firm rim.

Line the base of the pastry with baking parchment and then fill it with beans, rice, or pie weights, to prevent it from puffing up as it bakes. Place the weighted pastry crust into the oven and blind bake for 20 minutes.

Make the filling. Finely dice the onion and bacon. Beat the egg with a fork, combine it with the cream, milk, nutmeg, pepper and salt. Grate the cheese.

Take the crust out of the oven, remove the parchment. Sprinkle the bacon and onion onto the crust and top with the milk and cream mixture. It should cover the filling. Bake uncovered for 10 minutes. Take the quiche out of the oven, sprinkle with grated cheese and bake for 10 more minutes.
