Every family has their own cherry pie recipe – it’s a classic dessert for good reason. I decided against experimenting too much with this dish and just added some freshness to it. And the results were breathtaking. This cherry pie is tender and juicy all by itself, but if you go the extra mile and make a sauce to go with it, then it’ll taste even better.

Preheat the oven to 180C.

To make the yeasted dough, first make the starter. In a mixing bowl, combine the warm milk, yeast, sugar and 3 tbsp flour. Set aside in a warm place and let rest for 15 minutes. Then add the salt, vegetable oil and the rest of the flour. Mix well.

To make the filling, put the cherries into a small saucepan. Add the sugar, a pinch of cinnamon, a few cardamom seeds and bring to a boil. Cook over medium heat for 7 minutes. Drain the cherry juice and strain it – it will be the base for our sauce. To make it, dissolve the cornstarch in a few teaspoons of cold water and mix until you have a slurry. Add the slurry to the strained cherry juice and cook over low heat until it thickens.

Roll out the dough and place the cooked cherry filling in the center. Cover the filling with the edges of the dough so that it looks like a small log. Make some shallow incisions on top of the log with a sharp paring knife. Transfer the pie to a parchment-lined baking sheet and brush over with a whisked egg. Bake for 25-30 minutes or until golden. Serve with the cherry sauce.
