You can’t go wrong with a classic crumble – it’s simple, delicious, and a great way to use up seasonal summer fruit or berries. You can take pretty much any fresh fruit, add a little fragrant cinnamon and oatmeal, and enjoy the wonderful taste. Today we’ll be making a rhubarb crumble. I’ve decided to highlight the rhubarb’s tangy flavor with a little orange juice and add some spiciness using cinnamon. It’s a wonderful combination that’s sure to blow your mind.

Preheat the oven to 180C. Wash and trim the top and bottom of the rhubarb stalks. Cut them into 3cm chunks.

Wash the oranges, grate their zest using a box grater and squeeze their juice into a glass or small bowl.

Cut the butter into small cubes. In a mixing bowl, combine the butter, flour, oats, a pinch of cinnamon and the orange zest. Using your hands, rub the butter and flour mixture together until it resembles breadcrumbs.

Transfer the chopped rhubarb into an ovenproof dish. Sprinkle with 100g sugar and pour the orange juice over. Mix to combine. Cover with the crumble mixture and sprinkle with the remaining sugar. Bake for about 40-50 minutes. Remove from the oven and let cook a little. Serve with vanilla ice cream.
