Make a dough. Mix fresh yeast with warm water and sugar, wait 10 minutes and add salt and flour. Knead the dough and let it rise in a warm place. Then knead it again and roll out on the work surface in a thin layer. Cut the dough to the size of the pan. Preheat the oven to 180 degrees.
Cover the pan with one layer of oiled parchment. Spread a thin piece of dough on top and fry until cooked on both sides. Parchment is needed so that our tortilla does not burn and is well baked.
Mix grated gouda and mozzarella, cream and frozen corn. Spread the filling on one half of the tortilla and fold it in half. Put in the oven for 10-12 minutes.
While the tortilla is in the oven, prepare salsa. Cut all the vegetables into small cubes, add salt, a pinch of sugar and season with lime juice.
