Ingredients

400 g/3½ cups all-purpose flour
250 ml/1 cup kefir (fermented milk drink, can be substituted with thin plain yoghurt)
1 egg
½ tsp. salt
½ tsp. baking soda
500 g/1 lb. ground-meat mix
1 tbsp. sugar
For the sauce:
400 g / 1 lb. frozen sour cherries
½ tsp. ground coriander seeds
ground black pepper
½ cup sour cream
2-3 tbsp. vegetable oil

Poltava halushky with sour cherries and meat: Приготування

Крок 1
Prepare the dough for halushky. Mix flour, kefir, eggs, salt and baking soda in a bowl. Knead the dough until it is soft and not sticky.

Pinch off small pieces of dough and toss them into boiling salted water. Cook for 2 minutes, then remove halushky with a skimmer. Sprinkle the cooked halushky with oil so that they won’t stick together. Cover with a towel and leave in a warm place to ensure that they don’t cool before serving.

Prepare the sauce. Fry minced meat in a pan with a small sprinkling of oil. Season with salt, ground coriander and pepper to taste.

5 minutes before the meat is ready, add defrosted, pitted sour cherries with juice.

Mix halushky with fried meat and cherries in a large bowl. Serve hot with sour cream.
