Just look at this beauty! Just one glance at lahmacun and my heart begins to beat faster. In case you haven’t tried it, lahmajun is a soft Turkish flatbread with tender minced beef and fresh vegetables. It is usually baked for about 10 minutes in a hot oven. It is sometimes called «Turkish pizza», but trust me, it’s much more than that. In fact, as I write these words, I have the irresistible urge to run over to the kitchen and make one immediately. And you should do the same – it’s easy and unbelievably delicious!

To make the dough, combine the flour, water, milk and a pinch of salt in a mixing bowl. Mix until everything is well-combined and, using your hands, knead the dough until it is elastic and firm. Cover the dough with plastic wrap and let it rest for about half an hour.

Coarsely grind the beef in a meat grinder or just mince it with a kitchen knife. Finely dice the tomatoes, ½ bell pepper and onion. Finely chop up the parsley sprigs and mince the garlic cloves.

In a mixing bowl, combine the ground beef and the chopped up vegetables. Salad and pepper to taste and add about a teaspoon of paprika. Mix well to combine and knead the ground beef mixture until it becomes film.

Heat the oven to 200C. Divide the dough into 4 equal parts. Roll each part out into a thin flat circle.

Spread a thin even layer of the meat mixture onto each flatbread. Bake the flatbreads in the preheated oven for about 7-10 minutes. Serve the lahmacun flatbreads while still hot, with a splash of lemon juice on each one. You can also garnish them with lemon and tomato slices or a few sprigs of parsley.
