I always have a jar of sun-dried tomatoes in my fridge, and that’s because you can quickly turn them into a delicious snack. The simplest way to utilize them in your kitchen is simply to make a bruschetta with oven-dried tomatoes or a mixture of sun-dried tomatoes and ricotta cheese.
Before proceeding to the step-by-step recipe, I’ll give you some ideas about how to incorporate dried tomatoes into your dishes.
DRIED TOMATOES CAN IMPROVE ALMOST ANY DISH
Add them to borsch. You can make borscht according to your favorite recipe, then add a handful of finely chopped sun-dried tomatoes about 10 minutes before it is done. They can also be added to your vegetable base. You will be surprised, but this ingredient will really highlight your dish.
Mix them into pate. Are you making pâté from fish, liver or meat? Just add finely chopped sun-dried tomatoes! You can blend everything with a blender or just whisk them in once the pâté is ready. They will give the pate a light smoky flavor.
Add them to sauces. Whatever sauce you cook – pesto, mayonnaise or ketchup, try adding 3-4 pieces of sun-dried tomatoes and then blend until smooth. It will turn out to be very tasty. Whenever I make pesto, I always add some sun-dried tomatoes.
Add them to salads. Sun-dried tomatoes go well with meat, fish and vegetables, so they can be added practically to any salad. This addition can even improve such classic recipes as Caesar and Greek salads.

Preheat the oven to 75C. Take the tomatoes, wash them and quarter lengthwise. Using a teaspoon, remove the pulp and seeds from each tomato quarter.

Place the tomato pieces skin-down on a parchment-lined baking sheet. Sprinkle with sea salt and 1 tsp dried oregano. Place them in the oven for about 5-6 hours. To prevent the tomatoes from steaming, open the oven a crack from time to time to let the excess moisture out. Alternatively, you can insert a wooden stick between the top of the oven and the oven door so that excess moisture is constantly expelled.

Once your tomatoes have dried through, pack them into small sterile jars.

For flavor, sprinkle about 1 tsp granulated garlic over the dried tomato slices. Then pour the oil over the top so the tomatoes are completely submerged in it. Seal the jars. Store the jars of sun-dried tomatoes in the refrigerator.
