Herb-baked catfish: Directions

Step 1

Preheat oven to 180°C / 350°F degrees.

Step 2

Wash the catfish well, remove entrails and gills. Wash it well once again, and pat dry with a paper towel.

Step 3

Give the catfish a generous rub of salt, then brush it with a mixture of mustard, oil, finely diced garlic, and oregano. Put crushed juniper berries into it and sprinkle it with dried elderberries.

Step 4

Place the catfish on a baking paper-lined roasting tray and bake for 15–25 minutes, depending on the fish’s size. Serve hot.
