Step 1

Preheat oven to 180°C / 350°F degrees.

Step 2

Wash parsnip roots with a brush and peel with a peeler.

Step 3

Give them a generous rub of salt and wrap in foil. Bake for 45–50 minutes.

Step 4

Prepare the flavorful sour cream sauce. Add finely diced prunes to sour cream. Mix well.

Step 5

Serve baked parsnips with the sour cream sauce.
