When I visited Austria, the dish that surprised me the most was tafelspitz. What could be so special about a piece of boiled meat? However, it’s taste was so mind blowing that I decided to crack the recipe and share it with you. And don’t be put off by the long cooking time – the meat just needs a long time to simmer away. In fact, the dish itself is very simple to make – all you have to do is wait a little bit. So, it’s a perfect weekend project.

Wash the beef bones, place them in a large stock pot and cover with water. Bring to a boil, then reduce the heat to a simmer and add the tri-tip roast and the spices (the allspice, black pepper and bay leaves) to the pot. Let simmer over low heat, covered, for about 2 hours. Then add a pinch of salt.

Cut the unpeeled onion in half and brown in it a dry, hot skillet. Dice the remaining vegetables and also brown them in a hot dry skillet until golden. Add them and the onions to the stock pot with the meat and bones and keep simmering everything for 30 more minutes. Then remove the meat from the pot and pass the broth through a sieve, reserving the liquids and throwing out the vegetables and spices.

Make the applesauce-horseradish. Peel the apples and shred them using a box grater. In a small bowl, combine the shredded apples with a tablespoon of lemon juice. Then add a pinch of salt, the horseradish and a teaspoon of the reserved broth. Mix everything to combine.

To serve, cut the meat into large chunks, ladle a bit of the broth over it and garnish with chopped scallions. Serve the horseradish sauce on the side.
