Tortillas are a kind of flatbread which originated in Mexico and are an important part of Mexican and Texan cuisine. Although authentic Mexican tortillas are usually made from corn, they are also sometimes made from wheat flour. These are the kind of tortillas we’ll be making today. They’re easy to make and very versatile – you can use them to make all kinds of wraps, quesadillas with cheese and corn, or eat them straight out of the oven with a little butter. Trust me, you’ll love them!

In a medium-sized bowl, combine the warm water with the dry yeast and sugar. Let the yeast bloom for about 10 minutes, then add the flour and salt. Mix everything well to combine, then knead the dough by hand or using a stand mixer with a dough hook attachment. Once the dough is tacky and elastic, transfer it to a bowl and let it proof (it should double in size). Then, punch the dough down to get rid of the gas, knead once more and roll out into a thin sheet. Cut out a skillet-sized tortilla.

Line a skillet with a layer of parchment paper and place the tortilla onto the skillet. Fry it on both sides until golden and bubbly. The parchment paper will keep the tortilla from burning or sticking to the pan.
