I always feel bad for lentils – they’re sort of underrated, at least in Ukrainian cuisine. We love green peas in salads, add all kinds of beans to soups, but we mostly ignore lentils. I’d like to change that. One way to include more lentils in your diet is to add them to soups or have them as your side dish. It’ll definitely add some new flavors to your meal.
Lentils come in a variety of colors: they can be read, yellow, green, brown or even black. I love green lentils most of all, so I’d suggest you start out with them.

In a medium saucepan, combine one part lentils with three parts water. Add a pinch of salt and bring to a boil over high heat.

Add the star anise. This is an important step – the taste of star anise and lentils is a match made in molecular heaven. Of course, if you really dislike star anise, you can try to experiment with other spices or herbs: bay leaves, garlic, parsley stems, allspice… Any one of these will only improve the taste of lentils.

Once the water comes to a boil, reduce the heat to a little and cook for about 20-25 minutes or until the lentils are tender but not mushy.

Drain the excess water, then return the lentils to the saucepan and mix in the butter – it elevates the taste of all ingredients. And that’s it. You wonderfully fragrant side dish is ready to serve!
