Preheat the oven to 180 degrees. Wash the potatoes with a brush, cut into circles 5-7 mm thick. Place in a bowl, add salt, ground pepper and sunflower oil. Mix and place in a single layer on a foil-lined baking sheet and bake until done, about 30 minutes.
Cut the bacon into thin strips and fry in a dry pan until it turns brown. Prepare homemade mayonnaise according to this recipe.
Put potato slices on a plate, put bacon on top, add mayonnaise, cilantro and, if desired, some hot pepper.
