These granola bars are the perfect snack. They’re healthy, filling and delicious – and they only require a handful of pantry staples to make. Oats, nuts, honey, butter and warming spices… I’m hungry just thinking about all of this healthy goodness. And the best thing about them is that you can eat them on the go, or bring them to work or school as a wonderful homemade snack. Heat the oven to 160C. In a large mixing bowl, combine the rolled oats, flour, the softened butter (or coconut oil, if using), a pinch of salt, the cinnamon, sunflower oil, honey, sugar, raisins and chopped nuts. Mix thoroughly so that the mixture is well-combined.

Line a baking pan with parchment paper. Transfer the oat mixture to the prepared pan, and then use a rubber spatula or the bottom of a glass to firmly press the mixture into the pan. Bake at 160C for about 30-35 minutes.

Let the granola mixture cool completely in the pan. Then transfer the pan to the fridge for 1 hour minimum (or, better yet, overnight). This will help the mixture firm up and keep it from falling apart. Once it has cooled completely and set, you can remove it from the pan and cut into bars or squares.
