Alright, I get it. Chicken Cordon Bleu sounds fancy and difficult – like the kind of dish you wouldn’t dare to try and make at home. But I’m here to prove you wrong – anyone can make Chicken Cordon Bleu. After all, it’s just a simple dish made with a chicken breast, some ham and some cheese. Thanks to the breading, the meat stays moist and tender, while the crust grows nice and crispy. Just add a little lemon juice and you’ll have a wonderful dish to delight your guests!

Ingredients

2 boneless, skinless chicken breasts
2-4 slices ham
2-4 slices swiss cheese
4 tbsp all-purpose flour
2 eggs
4 tbsp breadcrumbs
1 lemon
Salt and pepper

Preheat the oven to 180C. Prep the chicken breasts – trim off the excess fat, cut off the connective tissue and cut off the tenders. Cut several slices of ham and several slices of swiss cheese.

Using a sharp knife, carefully slice the chicken breast horizontally. Be careful to not cut the chicken breast in half – you should slice it just enough to make a pocket. Salt and pepper the breasts on both sides.

Fold the cheese and ham slices into the chicken breast pockets. If there is some overhang, use a sharp knife to trim off the excess of the ham and cheese.

Prepare everything for the breading. In three separate bowls, arrange the flour, breadcrumbs and beaten eggs. First dredge each chicken breast in the flour, then dip them in the egg wash and then dip them into the breadcrumbs. Arrange the breaded chicken breasts onto a baking sheet and bake for about 25-30 minutes or until crispy and golden. Drizzle some lemon juice over the chicken breasts before serving.
