Batter-fried oyster mushrooms: Directions

Step 1

Wash oyster mushrooms and split them into smaller segments. Lay them out on an absorbent paper towel to dry.

Step 2

Prepare the batter. Season the eggs with salt and pepper to taste and whisk with a fork. Add ale or kvass, then mix again. Add flour and mix until you get the kind of batter you’d use in pancakes.

Step 3

Dip oyster mushrooms into the batter and place on a hot oiled frying pan. Fry until golden brown on all sides.

Step 4

Remove the mushrooms from the pan with a skimmer and place them on a paper towel to remove excess oil.

Step 5

Prepare the sour cream sauce. Add finely chopped green dill, parsley and pressed garlic to sour cream. Season with salt and pepper to taste.

Step 6

Serve batter-fried oyster mushrooms with the sour cream sauce.
