Batter-fried oyster mushrooms

Ingredients
400 g 14 oz. oyster mushrooms
100 ml 6½ tbsp. vegetable oil (for frying)
For the batter
240 g 1½ cup all-purpose flour
2 eggs
200 ml scant 1 cup pale ale or wheat kvass
For the sauce:
200 g / scant 1 cup sour cream
2-3 cloves garlic
fresh herbs to taste (parsley, dill)
salt, pepper
Batter-fried oyster mushrooms: Приготування
Крок 1
Wash oyster mushrooms and split them into smaller segments. Lay them out on an absorbent paper towel to dry.
Крок 2
Prepare the batter. Season the eggs with salt and pepper to taste and whisk with a fork. Add ale or kvass, then mix again. Add flour and mix until you get the kind of batter you’d use in pancakes.
Крок 3
Dip oyster mushrooms into the batter and place on a hot oiled frying pan. Fry until golden brown on all sides.
Крок 4
Remove the mushrooms from the pan with a skimmer and place them on a paper towel to remove excess oil.
Крок 5
Prepare the sour cream sauce. Add finely chopped green dill, parsley and pressed garlic to sour cream. Season with salt and pepper to taste.
Крок 6
Serve batter-fried oyster mushrooms with the sour cream sauce.
