What could be more comforting than delicious home-baked pies? We’ve all loved fragrant pies with various fillings ever since we were kids. This is something that immediately takes us back. When did people first start baking pies? It is difficult to say for sure, researchers have been arguing about this for a very long time, because a dish of filling wrapped in dough is found in almost every world cuisine. The uniqueness of pies and pastry-like pastries is that they can play the role of both a main course and a dessert or an appetizer, it all depends on the type of dough and filling you choose.
Today I want to talk about savory pies. You can go on and on for hours listing every kind of savory pie filling. I think you’ve already appreciated the recipe for pies with cabbage, so today I’ve decided to share my recipe for meat pies. There are options here too. Most often, the filling is fried minced meat, but sometimes boiled ground meat is also used. I decided to use minced pork for the filling. But I didn’t add fried onions, as is almost always done, as I wanted to make the taste as meaty as possible. I also added tomato paste for richness and cumin for flavor. I also experimented a little with the shape and made the pies triangular. You, too, can use your imagination and use various spices and form the pies into any shape you like. But first, I suggest that you try out my version – I promise it will be delicious!

Preheat the oven to 180C. Prep all of the ingredients you will be using to make the meat pies. If, like me, you’re using a stand mixer to knead to dough and grind the meat, make sure to prepare your grinding and dough hook attachments. For this recipe, I used my trusty KENWOOD stand mixer.

To make the dough, combine the flour, sugar, salt, egg, milk, oil and activated dry yeast in the bowl of a stand mixer. Make sure your activated dry yeast isn’t past its expiration date and check the instructions to see what amount of yeast you need to use, as it may vary depending on the manufacturer.

Using a dough hook attachment, mix the dough on medium. Knead until it is well-combined, smooth and elastic.

To make the filling, dice the pork and use the grinding attachment on your stand mixer to mince it. If you can knead the dough and grind the meat at the same time, you will save a lot of time and effort. If your stand mixer doesn’t have an attachment for grinding meat, you can use a separate grinder.

In a frying pan, heat up 2-3 tbsp vegetable oil and saute 1-2 crushed garlic cloves. After about 2-3 minutes, once the garlic has infused the oil with it’s aroma, remove the cloves from the pan.

Once you have removed the garlic, transfer the ground meat into the frying pan and cook for several minutes. Add the soy sauce and continue cooking.

After several minutes, add a tablespoon of tomato paste to the ground meat mixture. Salt and pepper to taste.

Mix well, so that the tomato paste and the seasonings are well-incorporated into the ground meat. Continue sauteing until the meat has cooked through.

Once the dough has risen, knead it a little more and divide into 12 equal parts.

Using a rolling pin, thinly roll out each ball of dough.

Place a little of the filling into the centre of each piece of dough and form the little pies. This time I went with a triangular shape, but you can experiment with the shapes as this doesn’t affect the taste.

Transfer the pies onto a parchment-lined baking tray and place them seam down.

To make the egg wash, mix one egg yolk with about 2 tbsp milk. Brush this mixture over the pies. It will help them get a nice golden-brown crust.

If you want to, sprinkle a tablespoon of dried poppy seeds over the pies. We usually think of poppy seeds as an ingredient for sweet baked goods, but I decided to use them in a savory dish. It really added some depth to the flavor.

Bake the pies on the center rack at 180C for about 25-30 minutes.
